1 1/2 lbs. russet potatoes, peeled, cut into 2" cubes In large saucepan, place potatoes and enough water to cover. Bring to a boil over medium heat; simmer until potatoes are fork tender (20-30 min.). Drain potatoes, reserving some of the cooking liquid. With hand potato masher, mash potatoes; stir in sour cream, salt and pepper until combined. Gradually stir in some of the reserved cooking liquid to desired consistency; serve immediately. Serves 4.
